PINEAPPLE SHRIMP KABOBS INGREDIENTS
  • 1 (8 oz.) pkg. frozen peeled & deveined shrimp
  • 3 tbsp. soy sauce
  • 2 tbsp. catsup
  • 1/8 tsp. ground ginger
  • Dash onion powder
  • 1 (8 oz.) can pineapple chunks (juice pack), drained
  • 1/4 c. cashews or peanuts, coarsely chopped (optional)
  • Hot cooked rice
PINEAPPLE SHRIMP KABOBS INSTRUCTIONS
1. Place frozen shrimp in a colander. Run cool water over shrimp just until thawed. Pat dry with paper towels.

2. Meanwhile, stir together soy sauce, catsup, ginger and onion powder. Set aside. Alternately thread four 12 inch skewers with shrimp and pineapple chunks. Place the skewers on the unheated rack of a broiler pan. Brush with some of the soy mixture.

3. Broil 4 to 5 inches from heat for 2 minutes. Turn kabobs. Brush with more soy mixture. Broil 1-3 minutes more or until shrimp turns pink. Brush with remaining soy mixture. Stir cashews or peanuts into hot cooked rice. Serve kabobs with rice. Garnish with celery leaves, if desired. Makes 2 servings.

Pineapple Shrimp Kabobs Recipe Ingredients
  • 1 lb. fresh or frozen lg. shrimp in shells
  • 1 c. pineapple slices (juice packed)
  • 3 tbsp. lemon juice
  • 2 tsp. safflower oil
  • 1/2 tsp. dry mustard
  • 1/4 tsp. pepper
  • 1/8 tsp. hot pepper sauce
  • 8 cherry tomatoes
Pineapple Shrimp Kabobs Recipe Instructions
Thaw shrimp, if frozen. Shell and devein shrimp. Drain pineapple, reserving juice. Halve pineapple slices. Combine reserved pineapple juice with next 5 ingredients; pour over shrimp. Cover and refrigerate 2 hours, spooning marinade over shrimp occasionally. Drain shrimp and reserve marinade. On 4 skewers, alternate shrimp and pineapple slices. Broil 4 inches from heat for 4 minutes; brush occasionally with marinade. Turn kabobs; put 2 tomatoes on end of each skewer. Broil about 4 minutes more, brushing with marinade. Yield: Serves 4.

MARINATED PINEAPPLE SHRIMP KABOBS

PINEAPPLE SHRIMP KABOBS INGREDIENTS
  • 32 large fresh unpeeled shrimp
  • 1 (15 1/4 oz.) can pineapple chunks in juice, undrained
  • 1/2 c. oil free Italian dressing
  • 1 (8 oz.) can no salt tomato sauce
  • 1 1/2 tbsp. brown sugar
  • 1 tsp. prepared mustard
  • 1 lg. green pepper cut into 1 inch cubes
  • 1 lg. sweet red pepper cut into 1 inch cubes
  • 12 pearl onions
  • Vegetable cooking spray
  • 2 c. cooked long grain rice
INSTRUCTIONS
Peel and devein shrimp, leaving tails intact. Set aside. Drain pineapple, reserving 1/4 cup juice set aside. Combine reserved juice, Italian dressing, tomato sauce, brown sugar and mustard. Place shrimp in a shallow dish; add juice mixture, and toss gently. Cover and marinade in refrigerator at least 3 hours. Stir occasionally. Remove shrimp from marinade. Place marinade in small saucepan, bring to boil. Reduce heat and simmer 5 minutes.

Alternate shrimp, pineapple chunks, peppers, and onions on 4 metal skewers. Coat grill rack with cooking spray, place on grill over medium hot coals. Place kabobs on rack and cook 3 to 4 minutes on each side until done, basting frequently with reserved marinade. Serve over cooked rice. Enjoy the pineapple shrimp kabobs !
